PALEO PORRIDGE - Grain free

Paleo Porridge with Blueberries
Homemade Pork Sausage Patties

PALEO PORRIDGE - Grain free
Paleo / Whole 30 compliant

Serves: 1-2
1/4 cup walnuts
2 Tablespoons unsweetened shredded coconut
1 Tablespoon pepitas (raw, green pumpkin kernels)
1 Tablespoon flax seeds, ground
1 Tablespoon chia seeds
1 teaspoon ground cinnamon
Pinch of nutmeg

 
* Combine all dry ingredients in a food processor (or a Ninja… or coffee grinder)
Blend until finely ground.
* In a single serving bowl, combine 1/2 cup porridge mix and 1/2 - 1 cup boiling water.  Stir. Wait 2 minutes.
* Drizzle with a few berries, raisins or coconut flakes.    Enjoy!

Large Batch:  Store in a quart Ball jar & refrigerate until ready to use.
2 cups walnuts
1 cup unsweetened shredded coconut
1/2 cup pepitas
1/2 cup flax seeds, ground
1/2 cup chia seeds
2 1/2 Tablespoons cinnamon
1 teaspoon nutmeg

* Toss ingredients into a blender or food processor. Pulse until finely ground.
* Spoon into a Ball jar, seal & store in the refrigerator (up to 2 weeks).

Ready to make a bowl of warm porridge?
* In a single serving bowl, combine 1/2 cup porridge mix and 1/2-1 cup boiling water.  Stir. Wait 2 minutes.
* Garnish with a cut fruit, berries or coconut flakes.    Enjoy!
