Taste the Tropics GRANOLA - Grain Free

Meal Menu Idea:
Scrambled Eggs 
Granola-Grain Free
Unsweetened Coconut or Almond Milk
(Protein + Healthy Fat =  Healthy Breakfast)

Taste the Tropics GRANOLA - Grain Free
Paleo / Whole 30 compliant

2 cups raw almonds, whole
1 cup raw macadamias, whole
1 cup pepitas (small, green pumpkin kernels)
1 1/2 cups unsweetened coconut flakes
2 teaspoons pure vanilla
1 teaspoon ground cinnamon
2 Tablespoons raw honey (optional-Omit for Whole 30) 
Pick a dried fruit:  pineapple, apricots, mango, raisins -Purchase fruit without additives or preservatives.

For best results, begin the night before...
* Place almonds, macadamias & pepitas in a large Pyrex dish. Cover with water, seal with a lid and soak overnight in the refrigerator.
* Place raisins in a smaller container, cover with water, seal and soak overnight in the fridge.

In the morning... 
* Preheat the oven to 200 degrees F.
* Use a large colander to strain the nuts and seeds. Drain, rinse and place in a food processor.  Pulse until coarsely chopped; place chopped nuts & seeds in a large bowl. 
* Add coconut flakes, vanilla and cinnamon; stir to coat.
* Place granola mixture on a large, parchment lined baking sheet; drizzle lightly with honey, if desired. Whole 30-omit honey.
* Bake 2 hrs.  Remove when granola is browned to perfection.
* Allow granola to cool completely then store in an air tight, glass container up to 2 weeks in the refrigerator.
** To serve, place 1/4 cup granola in a small bowl, add dried fruit and a drizzle of coconut milk (We recommend coconut milk whisked straight out of the can... thick and delicious!)
