BALSAMIC BRAISED CHICKEN BREASTS

Balsamic Braised Chicken Breasts
           Mashed Cauliflower (Paleo) or Mashed Potatoes (Whole 30)

BALSAMIC BRAISED CHICKEN BREASTS
Paleo / Whole 30 compliant
 
2 Tbs. olive oil
4 large bone-in chicken breasts (or skinless, boneless)
1/2 teaspoon sea salt
1 teaspoon black pepper, coarsely ground
1 onion, thinly sliced
2 bell peppers, any color, sliced or diced
4 cloves garlic, minced
1 (28oz.) cans organic, whole, peeled tomatoes, crushed by hand
1 teaspoon Italian herb blend
1/3 cup balsamic vinegar

NOTE: Leaving the chicken on the bone adds extra flavor to the sauce.  If you prefer to use boneless, skinless chicken breasts reduce the cooking time to 10 to 15 minutes.

* Season chicken breasts with salt and pepper.
* Preheat a large cast iron or stainless steel skillet over medium-high heat.  Add a dollop of oil and place chicken in skillet, bone side up and cook 2 to 3 minutes per side or until browned. Remove from pan to a plate and set aside.
* Add onions & peppers to skillet and saute until they begin to brown; add garlic and cook 30 seconds until fragrant.  Stir in remaining ingredients.  Add chicken, bone side up and any juices that have collected.
* Bring mixture to a low simmer and cook, covered, 15 minutes or until internal temperature of meat at the thickest part reaches 165 degrees.
* Remove to a platter immediately spoon the deliciously rich balsamic tomato sauce over the top.
