BROCCOLI, BACON & RAISIN SALAD

Broccoli, Bacon and Raisin Salad
Paleo / Whole 30 compliant

3 heads fresh broccoli
12 ounces uncured bacon
1/4 cup red onion
1/4  cup raisins (unsulfured)
1/2 cup sliced almonds (optional)
1/2 cup roasted sunflower seeds

Dressing:
1 cup Paleo mayonnaise
2 Tablespoons apple cider vinegar
1/2 teaspoon sea salt & pepper

* Preheat a large cast iron skillet. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown.
* Remove bacon to a plate with several layers of paper towels.
* Wash broccoli and cut into bite-size florets. Place in a large mixing bowl.
* Add onion, raisins, sunflower seeds to the broccoli bowl.
* In a small bowl, whisk dressing ingredients and pour over the broccoli salad.
* Stir dressing into salad and blend well.  Refrigerate until ready to serve.
** Before serving the salad; mix in the bacon pieces!

* Refrigerate leftovers.
