CITRUS VINAIGRETTE
Paleo / Whole 30 compliant
1/2 cup light olive (not EVOO)
1/4 cup white balsamic or coconut vinegar
1/2 cup freshly squeezed orange juice
sprigs of fresh dill (optional)
Sea salt and freshly ground pepper
* Place all ingredients in an immersion blender cup and whisk by hand or pulse with an immersion stick to blend.
* Pour vinaigrette into a glass jar with stopper.
* Chill. Shake and drizzle over salad greens, chopped summer vegetables or salmon!
* Store in the refrigerator up to 2 weeks.
