CocoNutty TRAIL MIX

CocoNutty TRAIL MIX
Paleo / Whole 30 complian
t
1 pound raw pecans
1 pound raw walnuts
1 pound raw almonds
6 ounces pepitas (green pumpkin seeds) optional
7 ounces unsweetened organic coconut flakes (Whole Foods)
2 Tablespoons ground cinnamon
2-3 Tablespoons Raw honey (Omit for Whole30)
Organic, unsweetened, dried fruit of choice 
Read labels: Choose unsweetened & unsulfured, organic raisins, apricots, mango,  pineapple, banana chips, blueberries, etc.  Trader Joe's has a wide assortment for the label reading shopper!

* Preheat oven to 300 degrees.  Line a baking sheet with parchment paper.
* In a large bowl combine nuts and coconut; add cinnamon and mix well.
* Drizzle honey(omit for Whole30) over the top and mix with wooden spoon.
* Spread mixture over parchment paper lined baking sheet.
* Toast in the oven for 15 minutes; stir once & continue toasting 10 more minutes. 
* Cool the trail mix completely... then add the dried fruit.
* Serving size 1/4 cup.  Enjoy!!

* Store leftovers in an air tight glass container at room temperature.
