AVOCADO, TOMATO & CUCUMBER SALAD

Meal Menu Idea:
Grilled Turkey Sliders
Avocado, Tomato & Cucumber Salad
Sparkling Water with a Splash of Lemon Juice

AVOCADO, TOMATO & CUCUMBER SALAD
Whole 30 and Paleo compliant

2 small English or Persian cucumbers, peeled if desired
2 cups grape or cherry tomatoes, cut in half
1/2 red onion, chopped (substitute: 2 Tbs. minced chives for mild flavor)
1 avocado, peeled, pitted & chopped
Drizzle white balsamic vinegar
1 lime, squeezed
Pinch of sea salt
Freshly ground black pepper
fresh parsley

* Place vegetable in a serving bowl.
* Drizzle with vinegar.  Cut the lime in half and squeeze juice over vegetables.  Salt and pepper to taste.
* Garnish with chopped parsley and serve.
** Leftovers should be covered in a glass storage container and refrigerated.
