LEMON GARLIC SHRIMP
Paleo / Whole 30 compliant
2 pounds raw medium shrimp, peeled and deveined, tails-on
4 Tablespoons organic ghee
4 cloves fresh garlic, peeled & minced
2 lemons, juice 1/2 lemon and cut the rest into wedges for serving.
Fresh parsley, chopped
Sea salt & freshly ground pepper
* Preheat a cast iron skillet over medium heat.
* Rinse shrimp under cold water to clean (and to remove ice, if frozen). Set aside.
* Melt ghee in skillet with garlic, salt & pepper. Add shrimp and saute for 3-4 minutes; tossing until shrimp is pink.
* Remove pan from heat. Add a few Tablespoons water, the juice of 1/2 lemon and chopped parsley. Stir to coat the shrimp & allow parsley to wilt slightly. Remove to a serving platter.
* Serve sizzling hot with lemon wedges and a dash of hot sauce, if desired.
** Refrigerate leftovers in a covered glass container. Serve leftovers chilled. Do not reheat.
