OVEN BROILED SIRLOIN STEAK WITH GARLIC GHEE

Oven Broiled, Grass-fed Sirloin Steak with Garlic Ghee

OVEN BROILED SIRLOIN STEAK WITH GARLIC INFUSED GHEE
Paleo / Whole 30 compliant

2 pounds grass-fed sirloin steak, 1 to 1.25 inches thick
Olive oil
Sea salt and freshly ground black pepper

Garlic Infused Ghee
1/4 cup ghee
6 cloves garlic, whole

Prepare Garlic Ghee:
* Melt ghee in a small saucepan, add freshly peeled garlic cloves.
* Slowly warm the ghee & garlic and simmer for 2-3 minutes. Cover and turn off the heat and allow to sit 15 minutes or more to infuse the ghee with flavor.  

Prepare the Steak:
* Preheat oven on broiler setting (550 degrees).
* Raise oven rack so that steak is 8-10 inches from broiler flame.
* Leave oven door slightly ajar so that broiler will not turn off if it gets too hot.
* Rinse steaks under cold water and pat dry with a paper towel.
* Grind salt and pepper over both sides of steak and press gently into meat.
* Use a Misto sprayer filled with olive oil and spray a light layer over the top of the meat (both sides).
* Place a stainless steel wire rack inside a baking sheet.  Place meat on top of rack.
* Cook steak for 5 minutes under broiler.
* Flip steak and cook another 5 minutes.
* Flip steak one last time and cook another 1-3 minutes testing each slab of meat with a Thermopen until internal temperature reads 125 degrees for rare, 130 for medium. 
* Transfer steak to a serving plate or cutting board and allow to rest for 3 minutes before serving.

**Refrigerate leftovers, sliced thinly and stored in glass, single serving containers for 'Grab-n-Go' meals the next day.
