ROASTED BRUSSELS SPROUTS

Meal Menu:
Grilled Grass-Fed Burgers

Roasted Brussels Sprouts

ROASTED BRUSSELS SPROUTS
Paleo / Whole 30 compliant

2 lbs. Brussels sprouts
2-3 Tablespoons melted ghee, coconut oil or grapeseed oil
1/2 pound uncured bacon (Whole 30: Choose Naked bacon without added sugar)
1 yellow onion
Freshly ground pepper

* Preheat the oven to 400 degrees.
* Trim the ends and any old outer leaves from the Brussels sprouts.
* Cut the sprouts in half & place in a large steel mixing bowl. 
* Cut raw bacon strips into 1/2 inch pieces with a sharp chef’s knife or kitchen shears.  Separate pieces and add them to the bowl of sprouts.
* Dice the onion and add to the bowl; add salt, pepper and drizzle with ghee or oil.  Mix well.
* Pour vegetables onto baking sheet and spread them out in a single layer.
* Place the baking sheet in the oven. Roast the sprouts for 35 minutes, tossing them half way through the roasting time.
* Remove from the oven; transfer to a serving platter & enjoy!

* Refrigerate leftovers in single serving glass containers for 'Grab-n-Go' meals the next day.
