SWEET POTATOES AND ONIONS
Paleo / Whole 30 compliant
4 medium sweet potatoes
1 large white or yellow onion
3 Tablespoons olive oil
salt and pepper
* Wash the sweet potatoes. Slice thinly; do not peel.
* Peel onions and discard outer layer. Cut in half and then thinly slice; separate the pieces.
* In a large bowl, mix sweet potatoes, onions, olive oil and seasoning. Mix with a wooden spoon until well coated.
* On a large baking sheet, spread vegetables in a single layer.
* Preheat oven to 400 degrees.
* Bake until sweet potatoes are softened and onions are slightly browned. (Approx. 20 minutes)
