LEMON HERB CHICKEN

Lemon Herb Chicken
Roasted Broccoli and Cauliflower

LEMON HERB CHICKEN
Paleo / Whole 30 compliant
 
4 chicken breasts
Olive oil
3 lemons
1 teaspoon freshly ground Italian or Tuscan seasoning
1 Tablespoon Dijon or stone ground mustard
Dash of sea salt and freshly ground pepper

* Prepare the meat by pounding it with a kitchen mallet to an even thickness.
* Squeeze the juice from 2 lemons and cut the last lemon in half for grilling.
* Prepare the marinade by mixing 3 Tablespoons olive oil, juice of 1.5 lemons,  mustard, basil and honey in a small bowl.  * Use a small whisk to blend ingredients well.
* Place chicken breasts in a square (glass or ceramic) casserole dish.  Pour marinade over the chicken and turn to coat.  Cover and refrigerate for 2-4 hours.

20 minutes before serving: 
* Preheat the grill.
* Dip a paper towel in olive oil and rub over the grate to oil it.
* Start steaming the broccoli.
* Place chicken on the grill and cook 4-6 minutes per side until the internal temperature reads 165 degrees.
* Place the lemon halves, cook until softened & striped with grill marks.

**Serve chicken with grilled lemon half and garnish with a sprig of fresh herbs (rosemary, oregano or thyme).

**Leftovers can be packaged into single serving, glass containers and stacked in the refrigerator for quick 'Grab-n-Go' meals the next day.
