RUTABAGA FRIES (Dubbed: 'RUTY's FRIES' in our household! :)
Rutabagas (3-4 lbs. feeds a family with leftovers)
Drizzle of olive oil
Fresh ground sea salt and pepper

* Peel rutabagas and cut into 1/4-inch fries.
* In a large bowl, toss rutabaga fries with oil, salt and lots of pepper.
* Line a large baking sheet with parchment paper.
* Roast in a single layer at 425° F for 20-25 minutes or until slightly brown. Turn the potatoes once after 10 minutes.
**Enjoy piping hot with a prepared meat of your choice and a mixed green salad.
* If there are leftovers, allow to cool in a single layer to retain crispness. Package the fries in single serving glass containers and refrigerate. They make a delicious part of a 'Grab-n-Go' meal for the following day.
