SLOW-COOKED PULLED PORK

SLOW-COOKED PULLED PORK  
Paleo / Whole 30 compliant

4-5 pound pork shoulder or pork butt - frozen!
2 medium white or yellow onions
1- 28 ounce can whole tomatoes (organic)
1/2 cup red wine (Whole 30 substitute 1/4 cup apple cider vinegar)
1 teaspoon oregano, thyme and basil
1/2 teaspoon ground black pepper or red pepper (for a little kick!)

* Place pork shoulder/butt into crock pot.
* Chop the onions into large pieces and toss in around the roast.
* Add canned tomatoes and red wine/vinegar.
* Sprinkle herbs and pepper over the meat.
* Set crockpot on LOW and let it go for 10 hours.  If the meat is not frozen it will take a lot less time to cook. 

When you get home from work, place the meat on a cookie sheet or pan with sides.  Using two forks shred the meat while separating & discarding the fat. 

Serve the meat piping hot with a few slow roasted tomatoes and onions on the side.  Enjoy with a steamed vegetable or a tossed salad.

** Refrigerate leftovers in glass containers for 'Grab-n-Go' meals the next day.
