BACON WRAPPED CHICKEN TENDERS
6 (free-range) chicken breasts
1 lb. uncured bacon (no preservatives, nitrates or nitrites)
sea salt and pepper to taste
1/2 teaspoon garlic powder
1/4 teaspoon chili powder
1/4 teaspoon smoked paprika
sprinkling of red pepper flakes
olive oil
* Preheat oven to 400 degrees.
* Cut each chicken breast into 3 strips of equal size.
* Toss chicken in a large bowl with spices and olive oil. Cover and marinate in the refrigerator for 30 minutes.
* Cut bacon strips in half. Wrap each piece of chicken with 1/2 strip of bacon.
* Line a baking sheet with parchment paper and arrange the chicken on top.
* Bake for 30-40 minutes, checking internal temperature of the chicken with a quality meat thermometer. Chicken is done when it reaches 165 degrees.
* If the chicken is cooked and a more crisp bacon is desired: Turn on broiler, move the oven rack to the top of the oven and allow the bacon to crisp close to the broiler element. Keep watch! It only takes a minute or two.
