Caramelized Onions

Caramelized onions:
2 Vidalia onions, sliced
2 Tbs. olive oil or ghee
* Begin by caramelizing the onions. While they are slowly cooking, make the BBQ BEEF.
* In a stainless steel skillet, heat oil or 1 Tbs. oil and 1 Tbs. ghee over medium-high heat until oil is shimmering.
* Add sliced onions. Stir to coat and reduce heat to medium. Cook slowly, stirring occasionally.
* While onions are cooking, preheat a large cast iron skillet over medium-high heat.
* Add oil, onion and garlic; saute until softened, about 5 minutes.
* Add the beef, season with salt and pepper and cook until browned, stirring to break up any clumps.
* Add the sauce, reduce the heat to low and cook until the meat and sauce and heated through (about 5 minutes.)
BBQ Beef:
2 lbs. lean ground beef (grass-fed)
2 Tablespoons olive oil
1 large yellow onion, chopped
3 cloves garlic, minced
Sea salt and freshly ground pepper
BBQ sauce (1.5 cups) homemade
1 small can Rotel (Mild) or El Pato tomato sauce
1 red sweet pepper, seeded and sliced
* Preheat a heavy (cast iron) skillet over medium-high heat.
* Add olive oil and heat until it shimmers. Add ground beef and brown the meat stirring it to break up the clumps.
* Add onions, garlic, salt and pepper to cook along with the beef.
* When the meat is fully cooked, drain off any grease.
* Return to heat. Add tomato sauce and enough BBQ to suit your taste. Simmer 5 minutes.
* Place a scoop of meat on a plate. Top with caramelized onions.
* Add a side of sliced sweet peppers and a generous portion of Super Simple Slaw. Grab a place on the sofa and enjoy the game. Go team!!!
