TROPICAL MANGO SALSA
1 mango, peeled, pit removed and chopped
1/2 cup cucumber, finely chopped
1/4 cup red onion, chopped
1/2 sweet pepper (red, orange or yellow) seeded and chopped
The juice of one lime
Freshly chopped mint leaves
* Finely chop fruit and vegetables. Place ingredients in a non-reactive bowl (glass or ceramic).
* Add juice and mint. Stir with a wooden spoon and set aside to allow flavors to blend.
* Spoon over baked or grilled pork chops, steak or fish.
* Refrigerate leftovers.
