SUPER SIMPLE SLAW (Paleo Coleslaw)

SUPER SIMPLE SLAW (Paleo Coleslaw)

1/2 head green cabbage, shredded
1/2 cup paleo mayo (mayo made with mild olive, walnut or avocado oils)
3 Tablespoons apple cider vinegar or balsamic vinegar (not white!)
1 Tablespoon Dijon mustard
1/4 teaspoon freshly ground pepper 
or 
1/2 teaspoon herbs and spices (get creative... try italian seasoning, tuscan seasoning, garlic & pepper, curry, cajun seasoning, 1 Tbs. hot sauce, etc.)
 
*Place cabbage and onion in a large stainless steel, glass or ceramic bowl.  
*In a small bowl mix mayo, vinegar, mustard, pepper and optional herbs and spices.  
*Toss well to combine and allow to stand at room temperature for flavors to blend (10-20 mins.) 
*Serve with barbequed meat and enjoy! 


*Get creative with your slaw!!!  Add pops of color and flavor by shredding a carrot or a small amount of purple cabbage, 1/2 red or yellow onion, sweet peppers and/or parsley.
