BEEF TACOS

Imagine grass-fed beef browning in the skillet with the scrumptious scents of taco seasoning and crushed ripe tomatoes drifting throughout the house.  It is Taco Tuesday today and our eldest daughter has prepared a Paleo Taco feast... with a twist.  Since we forgo the taco shells, she used romaine lettuce for the wrap and a chopped veggie mix to add crunch.   We topped it all off with fresh salsa and the meal was a flavor-fest!


BEEF TACOS (Mm. Mm. It's Paleo!)

1 lb. lean ground beef (grass-fed is best!)
1+ teaspoon taco seasoning 
1 (14.5oz) can organic stewed or whole tomatoes
Veggie 8 (chopped veggie mix)
Fresh salsa
Romaine lettuce
Extra toppings: (optional)  peppers, onions, olives, avocado, etc.

Directions:

* In a large skillet, brown the beef. Drain fat if necessary.
* Puree tomatoes in a blender, food processor or Magic Bullet.
* Add taco seasoning and tomatoes to ground beef.
* Simmer for 10-15 minutes to allow flavors to blend.
* Meanwhile, prepare toppings. 
* Wash and dry large leaves of romaine lettuce. Arrange on a platter.
* Set out a bowl full of salsa, a bowl of chopped veggie mix and any extra toppings.

Each person makes a plate layered with lettuce, meat, chopped veggie mix and toppings with a slathering of salsa on top!

Enjoy the meal with forks or fingers!  :)
