PALEO SANDWICH WRAPS

 
The art of 'wrapping' sandwich fillings in lettuce is a quick go-to meal option to stave off hunger in a healthy way.  With Thanksgiving turkey coming to our tables soon, try this simply delectable way to serve up leftovers.  But don't limit yourself!  Get creative with fresh produce and meats.

PALEO SANDWICH WRAPS


Iceberg lettuce leaves
Spinach, washed and dried
Roasted turkey, sliced or shredded
Avocado, peeled, pitted and sliced
Roasted Red Pepper and Artichoke Tapenade (Trader Joe's) 

* Wash and dry large leaves of lettuce.
* Lay ingredients down the center of a lettuce leaf.  Roll it up like a burrito.
* Insert a toothpick to hold the wrap together.   Serve and enjoy!  It really is that easy!

Other turkey combos to try:
Turkey - (uncured) bacon - spinach - tomato
Turkey - spinach - sweet peppers - tapenade
Turkey - spinach - cucumber - tomato - tapenade
Turkey - ham - spinach or kale - drizzle balsamic vinaigrette
Turkey - asparagus - spinach - drizzle olive oil - ground pepper
Turkey - (uncured) bacon - sweet potatoes

The combinations are endless! Of course, meats are not limited to turkey.  (I am in the Thanksgiving turkey frame of mind).  Create combinations with fresh produce and chicken, pork, beef, venison, seafood, etc.  *Remember to use grass-fed or wild meats/fish and organic produce whenever possible.  Better ingredients make a better wrap!

as an alternative to traditional sandwiches.
