BLACKENED TILAPIA (Baked)
Paleo / Whole 30 compliant
Serves 2:
1.5 lbs. tilapia fillets
2 Tablespoons grapeseed oil

Blackening Rub:
3 Tablespoons smoked paprika
1 teaspoon garlic powder
1/2 teaspoon sea salt
1/2 teaspoon course black pepper
1/2 teaspoon cayenne or chipotle pepper (optional)

Tartar Sauce: (optional)
1/2 cup Paleo Mayo
1 Tablespoon minced dill pickle
1 teaspoon fresh lemon juice
Pinch garlic powder
* Preheat oven to 425 degrees. 
* Line a baking sheet with parchment paper.
* Combine Blackening Rug ingredients in a small bowl; set aside.
* Rinse Tilapia filets under cold water and pat dry with paper towel.
* Brush fillets with grapeseed oil on both sides and cover with spice rub.
* Place fillets on prepared baking sheet.
* Bake 9-10 minutes or until thickest part of the fillet flakes when tested with a fork.
* Serve immediately with lemon wedges and tartar sauce, if desired.
