BEEF STROGANOFF

Meal Menu Idea:
Beef Stroganoff
Cauliflower Rice

Beef Stroganoff
Paleo / Whole 30 compliant

1 head cauliflower
4 Tbs. coconut oil
1.5 lbs. top sirloin steak or grass-fed ground beef
Sea salt and pepper
1 white or yellow onion, thinly sliced
4 cloves garlic, minced
2-(10 ounce pkgs) whole Baby Bella mushrooms, washed & sliced
1/2 cup dry red wine (Whole 30: Substitute Organic Beef broth)
2 cups organic beef broth (or homemade)
1/4 cup balsamic vinegar
2 Tbs. coconut aminos
1 Tbs. arrowroot or tapioca flour
1 cup organic coconut milk (Use the thick layer of cream from the top of the can)
Fresh parsley, optional garnish

CAULIFLOWER RICE:
* Wash & cut cauliflower into florets.  Pulse in a Ninja until  it is the consistency of rice.
* Place riced cauliflower in a medium saucepan.  Add 1 inch of water.
* Cover saucepan and bring water to a boil.  Cook 2-3 minutes.
* Drain cauliflower rice in a large colander.
* Transfer to a serving bowl; cover and set aside.

BEEF:
* Preheat a large cast iron or stainless steel skillet.
* Brown the ground beef, drain & set aside in a bowl.
* OR Melt a dollop of oil, add the steak, seasoned with a few generous pinches of salt and pepper, and let it cook undisturbed 3 mins. to sear.
* Flip the steak, and cook on the other side until browned, about another 3 minutes.
* Transfer steak to a cutting board; allow to rest 2-3 minutes.  With a very sharp knife, slice thin.

VEGETABLES:
* Return pan to heat and add 2 Tbs. coconut oil. Once it has melted, add the onions and saute for about 3 minutes.
* Add mushrooms, and stir to combine.
* Continue sauteing for an additional 5 minutes or until the mushrooms are cooked and the onions are beginning to caramelize. Add garlic,and stir for 30 seconds.
* Transfer vegetables to the bowl with the beef.

SAUCE:
* To the hot pan, add wine and vinegar to deglaze the pan. Use a cooking spoon to scrape up the 'fond' (brown bits) from the bottom of the pan.
* Allow the mixture to cook down and reduce by half.
* Meanwhile, in a separate bowl, whisk together the beef broth, Worcestershire sauce and flour until smooth.
* Pour the beef broth mixture into the pan, and stir to combine. Continue to simmer for 3 minutes, stirring occasionally.
* Stir in the coconut cream.  Add sliced steak. Adjust seasonings to taste.
* Serve over Cauliflower Rice and enjoy!
