ROASTED GREEN BEANS WITH SHALLOTS

Roasted Green Beans with Shallots

ROASTED GREEN BEANS WITH SHALLOTS
Paleo / Whole 30 compliant

3 Tablespoons grapeseed oil
1 1/2 lbs. fresh green beans (choose young, organic beans)
6 shallots, peeled, and cut into thin slivers
4 large cloves garlic, peeled and minced
¼ cup nuts, coarsely chopped ( hazelnuts, pecans, walnuts or almonds), optional
1/4 tsp. sea salt
1/2 tsp. freshly ground black pepper
1 teaspoon freshly squeezed lemon juice (optional)

* Preheat oven to 425 degrees.
* Wash beans & allow to drain in a colander. Trim the ends by snapping them off.
* Peel and slice shallots; peel and mince garlic; set aside.
* Chop the nuts and set aside.
* Preheat a large cast iron skillet over medium heat.
* Add grapeseed oil and shallots; quickly stir fry until they beginning to soften but not brown.
* Add garlic and stir for 30 seconds more.
* Add beans and nuts; stir to blend.
* Transfer pan to the preheated oven for 15-20 minutes or until beans are fork tender but still crisp.
* When beans are done, remove from oven, season and toss with a squeeze of fresh lemon juice (to preserve bright green color and add a splash of citrus).
* Serve immediately.
** Refrigerate leftovers in a covered glass or ceramic container.
