ITALIAN ZUCCHINI STICKS

Grilled Sirloin Steak

Italian Zucchini Sticks

ITALIAN ZUCCHINI STICKS
Paleo / Whole 30 compliant
 
8 small zucchini
olive oil or coconut oil
1/2 tsp.  thyme leaves, crushed
1/2 tsp. oregano leaves, crushed
1/2 tsp. basil leaves, crushed
1/2 tsp. garlic salt or sea salt
Freshly ground pepper

* Preheat oven to 425 degrees.
* Prepare baking sheet; line with parchment paper.

* In a small bowl, blend herbs, salt and pepper; set aside.
* Wash and trim the ends from the zucchini; cut into quarters, lengthwise.
* Place zucchini strips, cut sides up, on baking sheet. 
* Drizzle zucchini with olive oil or melted coconut oil and sprinkle with herb blend.

* Bake until zucchini are tender crisp and lightly browned; 15-20 minutes.
* Serve hearty portions as a side dish or as an appetizer with warm Marinara sauce for dipping.

* Refrigerate leftovers in a sealed glass container.
