EASY PICKLED CUCUMBERS

Easy Pickled Cucumbers

EASY PICKLED CUCUMBERS
Paleo / Whole 30 compliant

English (or Persian) cucumbers (thin skinned, fewer seeds & uniform in size)
1/4 cup (or more) apple cider or coconut vinegar
Pinch of sea salt
Freshly ground black pepper

*Leave cucumbers with peel and thinly slice into rounds.  Or use a vegetable peeler to remove 1/2 peel leaving lengthwise strips of green and white; thinly slice into rounds.
* In a glass  or ceramic bowl, drizzle with plenty of vinegar, salt & pepper; stir gently to blend.
* Cover, refrigerate and allow to marinate several hours or overnight.
