BALSAMIC BEETS
Paleo / Whole 30 compliant
1 bunch organic beets or 2 cans sliced beets (read label)
Drizzle of balsamic vinegar
Pinch of sea salt and freshly ground pepper
* Wash beets, trim ends and place in a medium saucepan.
* Cover beets with water and bring to a boil.
* Reduce heat and simmer until beets are fork tender; remove from heat.
* Drain & allow beets to cool.
* Slice into a glass container.
or
* Open canned beets, drain and place in a glass container.
* Drizzle beets generously with balsamic vinegar and a pinch of sea salt & pepper.
* Seal container. Invert a few times to distribute vinegar & spices.
* Refrigerate several hours or overnight & serve.
