SWEET PEPPER SLAW

SWEET PEPPER SLAW
Paleo / Whole 30 compliant
 
3 large bell peppers, (red, yellow and green)
1 red onion
1 head of green cabbage

Vinaigrette:
1/4 cup unfiltered apple cider vinegar
1/2 cup olive oil
2 Tbs. raw honey (Whole 30-omit honey)
1/4 tsp celery seed
1/4 tsp. mustard seed
1/4 tsp. tarragon
Pinch of sea salt & freshly ground pepper

* Prepare the vegetables. 
     -Remove tops, seeds and insides of peppers; slice thin.
     -Peel and thinly slice red onion.
     -Shred and chop cabbage.
* Place vegetables in a large glass or ceramic bowl.
* In a small bowl, whisk dressing ingredients to blend.  Toss with vegetables.
* Refrigerate for 30 minutes to allow flavors to develop.
* Serve & enjoy!
