YELLOW SQUASH NOODLES

Meal Menu Idea:
Grass-fed Beef Meatballs in Marinara Sauce 
Yellow Squash Noodles

YELLOW SQUASH NOODLES (Sqoodles)
Paleo / Whole 30 compliant
 
2 Tablespoons olive oil
3 medium yellow squash
1 shallot (or 2 cloves garlic) - optional
Pinch of sea salt
Freshly ground pepper

* Prepare vegetables: 
* Begin by washing the squash.
* Peel the squash into thin strips using a julienne peeler, stopping once you reach the seeds.
* Finely mince the shallot or garlic.  
* Heat a cast iron skillet over medium-high heat.
* Add olive oil.  Stir-fry the veggies and seasonings for 2-3 minutes.  
* Remove and serve as a side dish beside meat of choice or top with pesto or red sauce.
** Refrigerate leftovers in glass containers.
