ZUCCHINI & CARROT NOODLES


Meal Menu Idea: 
Oven Broiled Sirloin Steak with Garlic Ghee
Carrot & Zucchini Noodles

ZUCCHINI & CARROT NOODLES
Paleo / Whole 30 compliant

2 Tablespoons olive oil
4 medium carrots
2 medium zucchini
1 shallot (or 2 cloves garlic) - optional
Pinch of sea salt
Freshly ground pepper
Fresh herbs or seasonings of choice

* Prepare vegetables: 
* Begin by washing the zucchini and carrots, and then peel the carrots.
* Peel the zucchini into thin strips using a julienne peeler, stopping once you reach the seeds.
* Repeat the process with the carrots.
* Finely mince the shallot or garlic.
* Heat a cast iron skillet over medium-high heat.
* Add olive oil. Stir-fry the vegetables and seasonings for 2-3 minutes.  
* Remove and serve as a side dish or top with pesto or red sauce.
** Refrigerate leftovers in glass containers.
