Slow Cooked Beef Short Ribs

SLOW COOKED BEEF SHORT RIBS
Paleo / Whole 30 compliant
8 lbs. grass-fed beef short ribs, trimmed
Dry rub:
2 Tablespoons paprika (smoked or sweet)
2 Tablespoons garlic powder
2 Tablespoons honey (Omit for Whole 30)
3 teaspoons ground cumin
2 teaspoons chili powder
1 teaspoon chipotle pepper (optional)
1 teaspoon sea salt
1 teaspoon coarsely ground pepper
* In a small bowl, combine dry rub ingredients. Stir to blend.
* Put on a pair of disposable latex or Nitrile gloves and coat ribs with spice mixture.
* Place meat upright (like books on a shelf) inside a 6 qt. crock pot.
* Cook for 8 hours on High.
* Or place ribs in a roasting pan, cover and bake at 325 degrees for 2+ hours until tender.
* Remove meat from crock pot or roasting pan to a serving platter.
* Add a steamed vegetable or two and enjoy a perfectly Paleo meal for breakfast, lunch, dinner or snack!
** Refrigerate leftovers in single serving, glass storage containers for 'Grab-n-Go' meals the next day.
