Paleo / Whole 30 compliant
Fuji apples (or your favorite Fall variety)
Raisins - Dark or Golden
Nuts - walnuts, slivered almonds, pecans, macadamias or hazelnuts
Coconut oil or Ghee (clarified butter)
Cinnamon & Nutmeg
* Core the apples
* In a small bowl mix a few nuts & raisins. Add a pinch of cinnamon and nutmeg. Mix to coat well.
* Cut squares of foil (enough to fit around and seal the apple)... 2 layers of foil topped with a layer of parchment paper.
* Set an apple on each parchment/foil packet.
* Pack filling into apple core hole allowing it to overflow. Add a dollop of oil/ghee.
* Wrap the apple up tightly.
* Place each apple upright, around the edge of a campfire in the coals.
* Allow to roast 30-45 minutes until softened.
* Open the packet and enjoy!
