ROASTED SWEET POTATO WEDGES

Japanese Sweet Potatoes have a lower glycemic index than regular sweet potatoes.  Their flesh is lighter in color and more mild flavor.

ROASTED SWEET POTATO WEDGES
Paleo / Whole 30 compliant

5-6 Japanese or regular sweet potatoes
Grapeseed oil
Sea salt and ground pepper
Smoked or sweet paprika

* Preheat oven to 400 degrees.
* Wash sweet potatoes well. Cut each potato lengthwise into 6-8 wedges and place on a baking sheet covered with parchment paper.
* Season with paprika, salt and pepper.
* Roast for approximately 30 minutes until crispy & brown.  Turn after 15 minutes for even roasting.
* Serve plain or with homemade ketchup or bbq sauce.  Keep it Paleo!
* Refrigerate leftovers in glass storage containers for tomorrow's meals.  Delicious!
