HOMEMADE SAUSAGE

HOMEMADE BREAKFAST SAUSAGE
Paleo / Whole 30 compliant

1 pound freshly ground natural pork, chicken or turkey (no added hormones, preservatives, nitrites or nitrates)
1/2 teaspoon crushed red pepper flakes (Use less for a lower heat index!)
1 teaspoon rubbed sage
1 teaspoon ground mustard
1/4 teaspoon ground nutmeg
Pinch of sea salt
1 teaspoon coarsely ground black pepper

MILD ITALIAN SAUSAGE
Paleo / Whole 30 compliant

1 pound freshly ground natural pork, chicken or turkey (no added hormones, preservatives, nitrites or nitrates)
2 cloves garlic, minced
1 teaspoon sea salt
1 1/2 teaspoons dried fennel seed
1/2 teaspoon dried basil, crushed
1/2 teaspoon dried coriander, ground
1/2 teaspoon red pepper flakes (optional)

MEXICAN CHORIZO SAUSAGE 
Paleo / Whole 30 compliant

1 pound freshly ground natural pork, chicken or turkey (no added hormones, preservatives, nitrites or nitrates)
1 cloves garlic, minced
1 teaspoon sea salt
1/2 teaspoon freshly ground pepper
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/8 teaspoon / a pinch of ground cloves
1/4 teaspoon ground oregano
1/4 teaspoon crushed thyme
1/4 teaspoon ground cayenne pepper or 1/4 tsp. chili powder
1 Tablespoon smoked paprika

ANDOUILLE (CAJUN) SAUSAGE

1 clove garlic, minced

1 teaspoon freshly ground black pepper
