CUCUMBERS WITH PALEO CREAM SAUCE

CUCUMBERS WITH PALEO CREAM SAUCE
Paleo / Whole 30 compliant
 
English (or Persian) cucumbers (thin skinned, fewer seeds & uniform in size)
1/2 cup Paleo mayo
2 Tablespoons unfiltered apple cider vinegar
1/4 tsp. sea salt
1/4 teaspoon freshly ground black pepper
Fresh dill sprigs (or dried dill)

 * Option:  Leave cucumbers with peel and thinly slice into rounds.  Or use a vegetable peeler and peel the cukes lengthwise leaving strips of green and white; thinly slice into rounds.
* In a glass or ceramic bowl, combine mayo, vinegar, sea salt & pepper with chopped dill. 
* Whisk to blend well.
* Combine cucumbers with cream sauce; stir to coat.  Serve immediately or chill and serve later.

** Refrigerate leftovers in a covered, glass, storage container.
