OVEN ROASTED BEEF/BISON MEATBALLS

MEAL MENU IDEA:
Oven Roasted Beef/Bison Meatballs
Marinara Sauce or Paleo Beef Gravy
Italian Zucchini Strips

OVEN ROASTED BEEF/BISON MEATBALLS
Paleo / Whole 30 compliant
 
2  lbs. grass-fed ground beef or bison
1 bunch green onions, finely minced
1 teaspoon dried Italian herb blend
1 egg, beaten
Sea salt
Freshly ground pepper

* Preheat oven to 375 degrees.
* Line a baking sheet with parchment paper.  Place a wire rack on the baking sheet and set aside.
* In a large bowl, combine ingredients and mix well.

* Use a Tablespoon or small cookie scoop to measure out equal portions of meat.  Form into balls of equal size and drop onto the baking rack.

* Bake uncovered for 20 minutes or until browned and cooked through.  Internal temperature of meatballs should be 165 degrees.  Use an instant read thermometer to cook them to perfection.
* Remove pan from the oven.  Immediately transfer meatballs to a serving dish.

* Enjoy meatballs with homemade BBQ sauce, Paleo gravy or a slowly simmered Marinara. 

** Leftovers can be refrigerated in single serving, glass containers for 'Grab-n-Go' meals the next day.
