S&P SIRLOIN STEAKS

Meal Menu Idea:
S&P Sirloin Steak
Roasted tomatoes
Green Beans with Shallots & Hazelnuts

S&P SIRLOIN STEAKS
Paleo / Whole 30 compliant

Grass-fed beef sirloin steaks (1-inch thick)
Sea salt or smoked salt
Freshly ground pepper

* Pat steaks dry and season both sides with S&P (salt and pepper).  Gently use your hand to press seasoning into the steak.  Allow steak to rest 30 minutes and come to room temperature.
* Heat a large, heavy cast iron or stainless steel skillet (not nonstick) over medium high heat.
* Add steak and sear for 4 minutes; reduce heat to medium to prevent scorching.
* Turn steak and cook another 4-5 minutes until instant read thermometer (Thermopen) reads 130 degrees (medium rare).
* Remove steaks to a cutting board and allow to rest 5 minutes.

Prepare steak sauce in the skillet, if desired. See Balsamic Steak Sauce recipe. 
Serve steaks sliced thin with a large serving of roasted or steamed vegetable of choice.  Enjoy!

** Slice leftover steak and store in glass containers in the refrigerator for grab-n-go meals the next day.
