BACON & GUACAMOLE APPETIZERS

BACON & GUACAMOLE APPETIZERS
 Paleo / Whole 30 compliant
 
12 ounce package uncured bacon (Whole 30: Choose bacon with no added sugar)

* Cut bacon strips in half.
* Preheat a cast iron skillet over medium heat.
* Cook the bacon until crisp, turning once.
* Remove bacon to a paper towel lined plate to await appetizer assembly.


GUACAMOLE
Paleo / Whole 30 compliant
 
2 ripe Haas avocados
1 lemon or lime, squeezed
4 shakes of hot sauce
Sea salt
Freshly ground black pepper

Optional:
1 Roma tomato, finely diced
1/2 small red onion, finely diced
Fresh cilantro, torn

* Cut avocado open lengthwise. Remove the pit.
* Scoop out the flesh, sprinkle with juice, hot sauce, sea salt and pepper.
* Mash to desired creaminess.
* Add optional ingredients and gently stir to incorporate.
 *Assemble appetizers & serve immediately.

**Leftover Guacamole should be sealed in an air tight, glass container and refrigerated.  Air exposure will turn it brown.
