ESPRESSO BBQ SAUCE

Espresso BBQ Sauce is a thick, full bodied sauce that is perfect for smoked, roasted and grilled meats.  Perfect for dipping or slathering.  This sauce improves its flavor after a day or two of refrigeration, so make ahead of time!  Although the sauce has a kick to it, you can adjust the heat index by adding more chili powder and hot sauce as needed.

ESPRESSO BBQ SAUCE
Paleo compliant
 
1/2 cup freshly brewed espresso or strong, dark coffee
1 cup organic ketchup
1/3 cup red wine vinegar
1/2 cup shallots, finely chopped
1/2+  cup date paste
1 Tablespoon honey (optional)
2 cloves garlic, crushed
2 Tablespoons coconut aminos
1 Tablespoon ground cumin
1 Tablespoon chili powder
1 teaspoon hot sauce 

* Combine all ingredients in a medium stainless steel saucepan.
* Bring to a simmer of medium heat; reduce to low and allow to simmer 45 minutes. Stir occasionally.
* Cool to room temperature.  Serve or refrigerate in a glass container until ready to use.

** Serve with thinly sliced smoked brisket or pulled chicken, pork or wild game.
