BACON WRAPPED SWEET POTATO WEDGES

Mmm.  Meat candy (bacon) and sweet potatoes roasted to crisp-tender perfection.   

Meat... it's what's for breakfast, lunch, dinner and anytime in between!

BACON WRAPPED SWEET POTATO WEDGES
Paleo / Whole 30 compliant

4 large sweet potatoes
1 lb. thin sliced, uncured bacon (Whole 30: Choose bacon with no added sugar)

* Count the number of slices in the package of bacon. That is how many wedges of sweet potato will be needed.
* Preheat oven to 400 degrees.
* Meanwhile, prepare the sweet potatoes.  Wash and dry the sweet potatoes. Use a very sharp chef's knife to cut the sweet potatoes in half and then into the desired size and number of wedges.  
**(Note: Our wedges are large - Approx. 6 wedges per sweet potato)
* Place parchment paper on a baking sheet; set aside.
* Wrap one slice of bacon around each wedge of sweet potato.
* Lay sweet potato on baking sheet; tuck loose bacon ends underneath the wedge.
* Roast sweet potatoes until soft and bacon is crispy.  Approx. 25 minutes; more or less depending on the thickness of the wedges.  
**(Note: Wedges can be turned over half way through baking time.  However, we like the crispy bottom that forms when they are roasted in place the entire time.  Both methods roast well.)  
* Serve piping hot or store in the refrigerator in single serving glass containers for tomorrow's meals.
