SALMON WITH LEMON & DILL

Salmon with Lemon and Dill
Green Beans with Herbs

SALMON WITH LEMON & DILL
Paleo / Whole 30 compliant
 
1.5 lbs. wild-caught salmon fillet (1-inch thick)
Walnut oil
2 lemons
sea salt and freshly ground pepper
smoked paprika
fresh or dried dill

* Preheat broiler.  Move rack to 6 inches from heat.
* Remove skin and bones from the fillet; cut into 4 portions.
* Slice one lemon for garnish.  Juice the other lemon for drizzling.
* Rub oil over both sides of the fish, drizzle with half of the lemon juice and season generously with salt, pepper, a sprinkling of dill and paprika.
* Place salmon skin side down on baking sheet and place under broiler.
*  Broil until fish is opaque and flakes with a fork; 8-10 minutes.
* Remove fish from baking sheet to serving platter.  Drizzle with lemon, serve garnished with lemon slices.
