ROASTED TURKEY BREAST

Roasted Turkey Breast

ROASTED TURKEY BREAST
Paleo / Whole 30 compliant
 
1 boneless (free-range) turkey breast (4-5lbs.)
2 Tablespoons olive or coconut oil
Sea salt
Freshly ground pepper
1/2 cup chicken stock (for basting)

* Preheat oven to 325 degrees.
* Rub oil all over the turkey breast and season with salt and pepper. 
* Place the turkey breast on a rack inside a shallow roasting pan.
* Roast for 60 minutes, basting every 15 minutes with chicken stock.
* Use an instant read thermometer to check internal temperature; continue roasting until internal temperature reaches 160 degrees, remove from oven.
* Allow turkey to 'rest' for 10 minutes before carving and serving; (it will continue cooking & raise another 5 degrees.)

* A larger, bone-in turkey breast (5-7 lbs. may take 2 hours or longer to roast.)
* Refrigerate leftovers in single serving, glass containers for 'Grab-n-Go' meals the next day.
