CRANBERRY SAUCE

Meal Menu Idea:
Roasted Turkey Breast
Cranberry Sauce 
Green Beans with Herbs

CRANBERRY SAUCE
Paleo compliant
 
1 pound fresh, organic cranberries
Freshly squeezed juice of 3 oranges (3/4 cup)
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
*For best flavor; grate whole spices on a microplane!!
1 Tablespoon pure maple syrup (omit for Whole 30)


* In a colander, under cool running water; rinse cranberries and remove any white or shriveled berries.
* Squeeze oranges and grate the spices.
* Mix all of the ingredients together in a stainless steel saucepan over medium heat.
* Bring the mixture to a boil; reduce heat to medium-low and simmer until the berries begin to pop and their peels split. (Approximately 15-20 minutes)
* Remove saucepan from heat and allow cranberries to rest in the pan until they cool. The sauce will thicken as it cools

* Refrigerate sauce in a glass container until ready to serve.
