FLANK STEAK WITH GARLIC-BASIL GHEE AND CARAMELIZED ONIONS

FLANK STEAK WITH GARLIC-BASIL GHEE & CARAMELIZED ONIONS
Paleo compliant
 
2 large, sweet, yellow onions, sliced thin
1 clove garlic, minced
1 teaspoon fresh basil, chopped
1/4 cup ghee (clarified butter), softened
2 lbs. grass-fed beef flank steak
olive oil
sea salt
freshly ground black pepper

* Onions:  Preheat a cast iron or stainless steel skillet over medium low heat, add a dash of olive oil and onion slices. Gently saute for 20-25 minutes, stirring occasionally until onions are brown and tender.
* Ghee: Meanwhile, on a cutting board, place minced garlic and a pinch of sea salt.  Use the flat side of a chef's knife and work the ingredients into a paste.  Stir paste and basil into softened ghee.  Set aside. 
* Flank Steak: Season both sides of meat with sea salt and pepper.  Gently use your hands to press seasoning into the meat. 
*Preheat grill or stove top grill pan over medium high heat.  Oil the grill/grill pan with olive oil.  Add steak and sear 2-3 minutes per side until internal temperature reaches 125 degrees (rare) or 127 degrees(medium rare).  This steak is very lean. Do not overcook steak or it becomes tough and dry.   Remove steak and set aside to rest 3-4 minutes.  
* Thinly slice steak across the grain. Top with softened ghee and caramelized onions.
