ROASTED WHOLE CAULIFLOWER WITH INDIAN CURRY

ROASTED WHOLE CAULIFLOWER 
WITH INDIAN CURRY

2 small heads organic cauliflower
1/2 can coconut cream (full fat, not 'light')
1 Tablespoon (or more) Indian curry (HOT or mild)
1/2 teaspoon turmeric

* Preheat the oven to 400 degrees.
* Remove the cauliflower leaves and trim the woody core.
* Place the head in a ceramic baking dish. (Do not use glass, it might explode with the intense heat!)
* Add 1/2 inch water to the dish.
* In a small bowl, combine coconut cream and spices.  Mix well & spread evenly over the outside of the cauliflower.  (I use disposable latex gloves on my hands to slather it around the cauliflower.)
* Roast cauliflower, uncovered in the oven for approximately 20-30 minutes until it is fork tender.
* Remove from oven, Cut florets from the core into serving pieces
