CHICKEN SAUSAGE WITH SUN-DRIED TOMATOES & HERBS IN MARINARA SAUCE

Steamed Cabbage

CHICKEN SAUSAGE WITH SUN-DRIED TOMATOES & HERBS IN MARINARA SAUCE

1lb. Natural sun-dried tomato & basil chicken Sausage (Trader Joe's)
1 Tablespoon olive oil (or substitute: coconut, walnut or avocado oil)
1 (28oz) can organic, whole, peeled tomatoes
1 (6oz) can organic tomato paste
1 cup pico de gallo or fresh salsa
1 teaspoon dried basil leaves
1 teaspoon dried oregano leaves
2 cloves garlic, minced
1 large head of green cabbage

* Preheat a deep, cast iron skillet over medium heat.
* Add oil.  Using a kitchen shears, snip each of the sausages into 8 pieces; add to the skillet. 

* Using a metal spatula, fry sausagesThis is a soft sausage and will crumble easily; that is desired.
* Add pico de gallo, whole tomatoes with juice and tomato paste.  Use kitchen shears to snip the whole tomatoes into quarters right in the pan.  It is easy! Stir the sauce and bring to a boil.
* Stir in the herbs and garlic.  
* Reduce heat to simmer, uncovered, for 30 minutes.  Stir occasionally.
Sauce will reduce slightly and thicken. 

* Meanwhile, remove outer layer of cabbage leaves; remove core and cut into large chunks.
* Using a large pot, add 2 inches of water and a steamer basket; bring to a boil.
* Add cabbage to the steamer basket. Cover and steam until fork tender.  (Approx. 10-12 minutes)

*Serve steamed cabbage with a heafty spoonful of meat sauce.  
*Refrigerate leftovers in single serving, glass containers for quick 'Grab-n-Go' meals the next day.
