COCONUT CURRY CHICKEN WITH CAULIFLOWER

Meal Menu Idea:
Coconut Curry Chicken
Riced Cauliflower
Roasted Broccoli with Garlic

COCONUT CURRY CHICKEN 
                                  
4 free range, natural chicken breasts
1 teaspoon Indian curry powder
1/2 teaspoon smoked paprika
1 Tbs. coconut oil

Curry
1 white or yellow onion
1 sweet bell pepper
1 can coconut cream
1 cloves garlic, minced (or 1 tsp. puree garlic)
1 teaspoon Indian curry powder
1/2 teaspoon tumeric
1/2 teaspoon smoked paprika
Garnish with a dash of cinnamon (optional)

* Trim raw chicken breasts and cut into cubes.
* Preheat a cast iron pan.  Add coconut oil and chicken.  Sprinkle curry powder and paprika over chicken.  Cook the chicken, stirring often.
* Remove cooked chicken to a plate; set aside.
* Slice the onion and bell pepper, add them to the skillet and cook over medium heat until onions are caramelized and peppers slightly softened.  Add a drizzle of coconut oil if needed. 
* Add coconut cream, garlic and spices, stir well.
* Simmer vegetables for 10 minutes.
* Add chicken; stir and heat for 2 minutes.
* Serve curried chicken over Riced Cauliflowe
