HERB RUB (Garlic Free)

 HERB RUB (GARLIC-FREE)

2 Tablespoons dried rosemary leaves
2 Tablespoons dried thyme leaves
4 Tablespoons dried basil leaves
1 Tablespoon freshly ground black pepper

* Using a mortar and pestle, grind herbs a little at a time to release the flavors and aroma.  Do not grind to a powder, a few leaves left in the mix is desirable.

* Store the rub in a small glass or ceramic container until ready to use.

**To use:
Combine 1 Tablespoon of the dry rub with 1 Tablespoon of olive oil.  Rub generously over the entire surface of the meat before roasting, pan frying or grilling.  1 Tablespoon of Herb Rub will season 2-3 pounds of meat
