SQUASH & PEPPER SAUTE

Squash and Pepper Saute

SQUASH & PEPPER SAUTE
Paleo & Whole 30 compliant

2 handfuls of small patty pan squash
1-2 red peppers
1 yellow onion
Olive oil
Sea salt and fresh ground pepper

* Prepare vegetables:
    -Peel & dice onions in large pieces.
    -Halve & cut patty pan squash into wedges with skin on.
    -Cut peppers into strips.

* Preheat grill;  place all the vegetables in a grill pan and chargrill them until slightly tender.
(Substitute a deep cast iron pan if you do not have a grill pan.  Add a little bit of oil and preheat the pan inside the grill before adding vegetables.)
* Or use a preheated saute pan; stir vegetables as they saute over medium/high heat.

* Remove vegetables to a serving bowl or platter.
* Drizzle with olive oil, sea salt and freshly ground pepper. 
* Serve immediately while the vegetables are hot or serve at room temperature.

* Store leftovers in glass storage containers, in the refrigerator.
