JAMAICAN JERK PORK with PEPPERS

JAMAICAN JERK PORK WITH PEPPERS

The Jerk Marinade
3 teaspoons curry powder
1/2 teaspoon garlic powder
1/4-1/2 teaspoon cayenne pepper
1/4 teaspoon ground ginger

Main Dish
1 lb. pork tenderloin, silver membrane removed and pork sliced into 1/2 inch thick medallions
Walnut or Avocado oil
2 sweet peppers (a combo of red, orange or yellow), sliced into strips

1 sweet onion, sliced into strips

2 Tablespoons coconut aminos  
Splash of white wine or coconut vinegar
Fresh parsley

Directions
* In a large steel or glass mixing bowl combine the Jerk spices.  Add pork medallions to spice mixture and stir to coat. 
* Preheat a large flat-bottom wok or cast iron skillet over high heat for a minute or two.  
* Add 1-2 Tablespoons of oil and swirl to coat the pan; add pork and stir-fry 2 minutes or until pork is no longer pink. Remove pork to a serving platter.
* Add peppers and onions; stir fry 2-3 mins. Remove them to serving platter. 
* Add 1 Tbs. oil, coconut aminos, white wine and leftover spices to the pan.  Heat through.  
* Return pork, peppers and onions to the wok.  Stir fry 1 minute to heat through.  
* Serve immediately.  Garnish with chopped fresh parsley and serve with a side salad or vegetable.
