12 WAYS TO ENJOY EGGS (PALEO)



 A great way to begin each day is to jump start one's metabolism 30 minutes after both feet hit the floor with breakfast!!!  It is time for a big glass of water, a cup 'o java and a satisfying breakfast of protein (meat and eggs) plus healthy carbohydrates (vegetables and maybe a small portion of fruit).  Whip up some eggs with extra ingredients and add a dash of variety to breakfast!  

For starters, we shop for Cage-Free or Omega-3 Eggs. They cost a bit more (approx. 14 cents per egg... ) but the healthier ratio of Omega 6/Omega 3 is worth every penny.  Omega 6 are the nasty pro-inflammatory fatty acids found in domesticated meats and animal by products compared to Omega 3 which are good and necessary fatty acids; much healthier for you than what you get in the cheap-o eggs!  We also choose fresh, organic vegetable ingredients, grass-fed, free range meats and uncured bacon/pork (no nitrates or nitrites).  The freshest ingredients make the healthiest, most delicious tasting meals!

As always, eating Paleo is about eating 'clean'.  Keep it simple and enjoy some eggs!

Twelve Ways to Enjoy Eggs 
                         and Spice up Breakfast! 

1. Mushroom and Green Onion Scramble
Saute sliced shitake or portabella mushrooms with diced green onions.  Beat eggs and scramble with cooked vegetables.  Top with freshly chopped dill.

2. Mexican Scramble
Scramble eggs with freshly ground pepper and top with fresh avocado slices and salsa.

3. Chorizo and Salsa Scramble
Brown chorizo (spicy pork sausage) in a skillet.  Add eggs and scramble.  Serve topped with fresh salsa; garnish with fresh cilantro leaves.

4. Greek Omelet
Saute chopped olives, tomatoes, scallions in olive oil.  Make a 3-4 egg omelet and fill with vegetables.  Serve piping hot!
5. Salmon, Egg and Tomato Stack
Saute 2 cloves minced garlic in a dab of ghee (clarified butter). Add tomato slices and cook 2 minutes.  Top each tomato with a fried egg and sprinkle with freshly chopped basil.  Serve with smoked salmon (leftover from the night before!)

6. Asparagus and Bacon with Scrambled Eggs
Chop bacon into 1-inch pieces.  Begin frying it in a skillet. Wash and chop asparagus; add it to the bacon and sauté both.  Drain away any grease. Scramble eggs and serve along side asparagus and bacon.
** Substitute a handful of raw spinach leaves in place of the asparagus. 

7. Poached eggs with Onions and Peppers
Place eggs in an egg cooker equipped with poaching tray or gently poach the eggs the old-fashioned way in a skillet of boiling water.  Meanwhile, chop onion and sweet peppers.  Saute vegetables with ghee (clarified butter) in a heavy skillet until caramelized.  Serve the poached eggs topped with vegetables. Garnish with fresh parsley sprigs.

8. Curried Eggs
Whisk together eggs.  Add a splash of coconut or almond milk and a few shakes of curry powder.  Scramble and sprinkle with chopped basil or parsley.
9. Egg Ramekins
Butter ramekins.  Beat eggs until foamy. Add chopped bacon or ham and fresh parsley to each. Fill ramekin to within ½ inch of the top with beaten eggs.  Set ramekins inside a baking dish of hot water and bake at 350 degrees until the whites are set. 

10. Sausage and Vegetable Frittata
In an oven safe skillet, saute chopped sweet pepper and sliced zucchini.  Add Italian sausage, sliced thin and cook 3-4 minutes.  Or if preferred, remove casing and brown the sausage. Beat 8 eggs, pour over the meat and vegetables and bake at 350 degrees until set. 

11.  Sweet Potato and Eggs
Thinly slice sweet potato and place in a single layer on the bottom of a large skillet.  Fry in a dab of ghee (clarified butter) or avocado oil.  Brown on both sides.  Remove to a plate.  Fry or scramble eggs.  Sprinkle with pepper and chopped herbs. 


12. Mrs. Dash's Smashed Eggs
Hard boil a dozen eggs. Eat some for breakfast; put the rest in the refrigerator for later.  Peel eggs while warm and place on a plate.  Using a fork, smash the eggs into little bits.  Add a shake of Mrs. Dash Seasoning and enjoy with a sliced apple, a Clementine or a handful of grapes.
